For very light roasts, which showcase the most delicate and complex flavours, aim for a water temperature between 95°C to 100°C (203°F to 212°F). This higher temperature range ensures you extract the subtle fruity and floral notes that define very light roasts, while still preserving their bright acidity.

Light Roast: Lively and Vibrant
